Mirin Glazed Salmon

I have been making this recipe for several times now, it still is a hit among my friends and boyfriend. Thought I might share it with you guys... So there you go, my take on Nigella's Mirin Glazed Salmon, hope you enjoy.. :)

Ingredients:
Marinade:
60ml mirin (Japanese sweet rice wine)
50g light brown sugar
60ml soy sauce
4 x 125g pieces salmon, cut from the thick part of the fillet so that they are narrow but tall rather than wide and flat

Sauce:
Some of the salmon marinade
2 x 15ml tablespoons rice vinegar

Garnish:
1–2 spring onions, halved and shredded into fine strips


Cooking steps:
1. Mix all the marinade ingredients in a shallow bowl, or in my case in a large sandwich bag, and marinade the salmon

2.
Cook the salmon in the hot, dry pan for 2 minutes and then turn the salmon over, add the marinade and cook for another 2 minutes. Cook it longer if you wish to have a "done" fish.

3. Remove salmon to plate, add the rice vinegar to the hot pan, and warm through.

4. Pour the sauce on top of the salmon and you may garnish it with the spring onion (chopped, stripped, julienned, however you like really... )

well, the pictures show how the dish should look like and how it actually look..
I try to get creative by adding scallop in to the recipe, but it doesn't taste as good, they taste fishy :p
